Method

Beef Short Ribs Preparation

    Season the Ribs

    Pat the short ribs dry with paper towels. Season generously with salt and black pepper on all sides.

    Sear the Ribs

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs in batches and sear until browned on all sides, about 8-10 minutes. Remove and set aside.

    Cook the Vegetables

    In the same pot, add chopped onion and minced garlic. Sauté until the onions are translucent, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and cook for 2-3 minutes.

    Add Broth and Herbs

    Add beef broth, fresh thyme, and bay leaves to the pot. Return the short ribs to the pot, ensuring they are submerged in the liquid.

    Slow Cook the Ribs

    Cover the pot and reduce the heat to low. Allow the ribs to cook for 3-4 hours, or until the meat is tender and falls off the bone.

Au Jus Preparation

    Strain the Broth

    Once the ribs are done cooking, carefully remove them from the pot and set aside. Strain the remaining liquid into a saucepan.

    Prepare the Au Jus

    Add reserved beef broth, Worcestershire sauce, and black pepper to the saucepan. Simmer over low heat for 10-15 minutes to enhance the flavors.

Serving

    Prepare the Baguette and Cheese

    Slice the French baguette and layer with provolone cheese on a baking sheet. Broil in the oven for 2-3 minutes until the cheese is melted and bubbly.

    To serve, place the tender short ribs on a platter alongside the au jus for dipping. Serve with the cheesy baguette slices.
