Broth Preparation

    In a large pot, add the pork bones and cover with 4 liters of water. Bring to a boil over high heat, then reduce to a simmer. Skim off any foam that rises to the surface.

    After simmering for 1 hour, add miso paste, soy sauce, mirin, sake, garlic cloves, ginger slices, and green onions to the pot. Continue simmering for an additional 2-3 hours.

    Once the broth is rich and flavorful, strain it through a fine-mesh sieve into another pot, discarding the solids. Keep the broth warm.

Pork Belly Preparation

    Preheat the oven to 160°C (320°F). Rub the pork belly with salt, black pepper, and sugar. Place it in a baking dish.

    Drizzle soy sauce, mirin, and sesame oil over the pork belly. Cover with foil and bake for 2 hours until tender.
