Noodles and Toppings

Method

Preparing the Broth

  1. 1

    Combine Miso and Broth

In a large pot, add the vegetable broth and bring it to a gentle simmer over medium heat.

  2. 2

    Add Miso Paste

Whisk in the miso paste until fully dissolved. This will create a rich base for your ramen broth.

  3. 3

    Incorporate Seasonings

Add the soy sauce, sesame oil, minced garlic, grated ginger, and chili paste (or Sriracha) to the pot. Stir well to combine.

  4. 4

    Simmer the Broth

Let the broth simmer for about 10 minutes to develop flavors, stirring occasionally.

  5. 5

    Add Green Onions

In the last minute of cooking, stir in the chopped green onions, then remove from heat.

Cooking the Noodles and Preparing Toppings

  1. 6

    Cook Ramen Noodles

In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.

  2. 7

    Prepare Soft-Boiled Eggs

While the noodles are cooking, bring another small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes. Remove and place in ice water to cool before peeling.

  3. 8

    Assemble the Bowl

In serving bowls, divide the cooked noodles and pour the hot miso broth over them. Top each bowl with halved soft-boiled eggs, nori sheets, bamboo shoots, corn, and a sprinkle of chili flakes to taste.
