For the Blackened Mahi Mahi

Prepare the Spice Mix
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well.

Season the Mahi Mahi
Rub the spice mix evenly over the mahi mahi fillets.

Cook the Mahi Mahi
In a skillet, heat olive oil over medium-high heat. Add the mahi mahi fillets and cook for about 4-5 minutes on each side, or until blackened and cooked through. Remove from the heat and set aside.
For the Mango Slaw

Combine Ingredients
In a large bowl, combine the diced mango, shredded red cabbage, grated carrot, and chopped cilantro.

Make the Dressing
In a small bowl, whisk together lime juice, honey, and salt until well combined.

Mix Slaw
Pour the dressing over the mango and cabbage mixture, and toss until everything is well coated. Set aside to let the flavors meld.
For the Garlic Herb Aioli

Make Aioli
In a small bowl, mix together mayonnaise, minced garlic, chopped parsley, lemon juice, and salt until smooth and creamy.
For Assembly

Assemble the Sandwich
Spread a generous amount of garlic herb aioli on the bottom half of each bun. Place the cooked mahi mahi fillet on top, followed by a scoop of mango slaw. Top with the other half of the bun. Serve immediately.
