Prepare the Lavender Syrup (if not using store-bought)
In a small saucepan, combine equal parts water and granulated sugar, add dried lavender buds, and bring to a gentle simmer. Stir until sugar dissolves, then remove from heat and let it steep for 30 minutes. Strain and cool.

Juice the Lemons
Squeeze fresh lemons to obtain 1 oz of lemon juice, ensuring to strain out any seeds or pulp.
Mixing the Drink

Combine Ingredients
In a cocktail shaker, combine 2 oz of Tanqueray gin, 1 oz of fresh lemon juice, and 1 oz of lavender syrup. Fill the shaker with ice and shake vigorously for about 15 seconds.

Strain into Glass
Strain the mixture into a glass filled with ice cubes.

Add Sparkling Water
Top the drink with 4 oz of sparkling water for a refreshing fizz.

Float the Empress Gin
Carefully pour 1 oz of Empress gin over the back of a spoon to create a float on top of the drink.
