Prepare the Fruit
Wash and hull the strawberries. Cut the mango and pineapple into small chunks, discarding the pit and skin.

Make the Simple Syrup
In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let it cool.

Blend the Ingredients
In a blender, combine the prepared strawberries, mango chunks, pineapple chunks, the cooled simple syrup, lemon juice, and vanilla extract. Blend until smooth and well combined.
Freezing

Freeze the Mixture
Pour the blended mixture into a shallow container and spread it evenly. Cover with a lid or plastic wrap and freeze for at least 4 hours or until firm.
