    Prepare the Potatoes

    Wash and dice the Russet potatoes into small cubes.

    Cook the Potatoes

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes, salt, and black pepper. Cook for 15-20 minutes, stirring occasionally until golden brown and crispy.

Roasted Vegetables

    Prepare the Vegetables

    Chop bell peppers, zucchini, and red onion into bite-sized pieces.

    Roast the Vegetables

    Preheat the oven to 425°F (220°C). Toss the chopped vegetables with olive oil, salt, and black pepper on a baking sheet. Roast for 20 minutes or until tender and slightly caramelized.

Cook the Meats

    Cook Pancetta

    In a skillet, cook the pancetta bacon over medium heat until crispy. Remove and set aside.

    Cook Sausage

    In the same skillet, add the jalapeño pork sausage and cook until browned and fully cooked through. Remove and set aside.

Pickled Onions

    Slice the Onion

    Thinly slice the red onion.

    Make Pickling Brine

    In a bowl, mix apple cider vinegar, sugar, and salt until dissolved. Add sliced onions and let sit for at least 30 minutes.

Poached Eggs

    Prepare the Water

    Fill a saucepan with water and add the white vinegar. Bring to a gentle simmer.

    Poach the Eggs

    Crack eggs into individual small bowls. Gently slide each egg into the simmering water. Cook for about 3-4 minutes until the whites are set but yolks remain runny. Remove with a slotted spoon.

Hollandaise Sauce

    Melt the Butter

    In a saucepan, melt the butter over low heat until completely liquefied.

    Whisk Egg Yolks

    In a mixing bowl, whisk the egg yolks until light and frothy.

    Combine and Whisk

    Slowly drizzle the melted butter into the whisked egg yolks while continuously whisking until smooth and creamy. Add lemon juice, salt, and cayenne pepper, whisk until well combined.

Assembly

    Plate the Dish

    On a plate, layer home fries, roasted vegetables, cooked meats, and top with poached eggs. Drizzle with hollandaise sauce and garnish with pickled onions.
