Prepare the Chicken

Prepare the Chicken Breasts
Start by flattening the chicken breasts to an even thickness using a meat mallet or rolling pin. This helps them cook evenly.

Bread the Chicken
Set up a breading station: in one bowl, place the flour mixed with salt and pepper. In a second bowl, beat the eggs. In a third bowl, place the panko breadcrumbs. Dredge each chicken breast in flour, dip into the egg, and then coat thoroughly with panko breadcrumbs.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Cook the Chicken
Carefully add the breaded chicken breasts to the hot oil. Fry for about 5-7 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Sandwich

Add Cheese & Assemble
Place a slice of cheddar cheese on each piece of fried chicken while hot to melt. On the bottom half of each toasted bun, layer with lettuce, fried chicken with cheese, pickles, and drizzle with spicy Korean sauce. Top with the other half of the bun.
