Once boiling, remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until the dough comes together and forms a ball.

Let the dough cool for a few minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Pipe the Churros
Transfer the churro dough to a piping bag fitted with a large star tip. Pipe 4-inch strips of dough into the hot oil, frying only a few at a time to avoid overcrowding.

Fry Until Golden
Fry the churros for about 2-3 minutes on each side or until they are golden brown. Remove with a slotted spoon and drain on paper towels.

In a shallow bowl, mix the granulated sugar and ground cinnamon together. Roll the fried churros in this mixture while they are still warm.
