Prepare the Churro Dough
In a medium saucepan, combine water, unsalted butter, and granulated sugar. Heat over medium until the butter melts and the mixture comes to a rolling boil.

Add Eggs
Let the dough cool for a few minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Pipe the Churros
Transfer the dough to a piping bag fitted with a star tip. Heat oil in a deep pot to 375°F (190°C). Pipe 4-6 inch lengths of dough directly into the hot oil.

Fry the Churros
Fry the churros for about 2-3 minutes, turning them occasionally, until they are golden brown. Remove them and drain on paper towels.

Prepare the Cinnamon Sugar
In a small bowl, mix together the granulated sugar and cinnamon until well combined.

Scoop the Ice Cream
Take two churros and place a generous scoop of French vanilla ice cream between them to form a sandwich.
