Method

Preparation of Cake

  1. 1

    Preheat the Oven

Preheat your oven to 450°F (230°C). Grease four ramekins with butter and lightly dust with flour.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Melt in the microwave in 30-second intervals, stirring in between until smooth. Allow it to cool slightly.

  3. 3

    Mix Eggs and Sugar

In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously to prevent the eggs from cooking.

  5. 5

    Add Flour and Flavorings

Sift in the all-purpose flour, salt, and vanilla extract. Gently fold until just combined, being careful not to overmix.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Baking and Serving

  1. 7

    Bake the Cakes

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center remains soft.

  2. 8

    Let Cool

Remove from the oven and let the cakes sit for 1 minute. Carefully run a knife around the edges to loosen.

  3. 9

    Serve

Invert each ramekin onto a plate and gently tap to release the cake. Serve immediately with a scoop of vanilla ice cream and sprinkle with chocolate shavings if desired.
