Preparing the Chicken

Season the Chicken
Season the boneless, skinless chicken breasts with salt and black pepper on both sides.

Pan Roast the Chicken
Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until they are golden brown and cooked through. Remove from the skillet and let rest before slicing.
Cooking the Pasta

Boil Water
In a large pot, bring salted water to a boil.

Cook the Tagliatelle
Add the tagliatelle noodles to the boiling water and cook according to package instructions until al dente, usually about 7-9 minutes. Drain and set aside.
Making the Sauce

Prepare the Sauce Mixture
In the same skillet used for the chicken, add the heavy cream and bring to a gentle simmer over medium heat.

Add Cheeses and Onions
Stir in the Grana Padano and Asiago cheeses until melted and smooth. Add the sautéed onions and mix thoroughly.

Combine with Pasta
Add the cooked tagliatelle noodles to the sauce, tossing to coat evenly in the cheese mixture.

Slice the roasted chicken and place it on top of the pasta. Garnish with chopped chives.
