Brioche Bites Preparation

Prepare the Brioche
Cut the brioche bread into bite-sized cubes, about 1 inch each.

Make the Egg Mixture
In a bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

Soak the Bread
Add the brioche cubes to the egg mixture and gently stir to ensure all pieces are coated. Allow to soak for 10 minutes.

Cook the Brioche Bites
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the soaked brioche cubes in batches and cook until golden brown on all sides, about 2-3 minutes per side. Add more butter as needed.

Make the Caramel
In a medium saucepan over medium heat, add the granulated sugar. Stir constantly until the sugar melts and turns a deep amber color.

Add Butter
Once the sugar is melted, carefully add the unsalted butter and stir until melted and combined.

Add Cream and Vanilla
Slowly pour in the heavy cream while stirring. Be careful as the mixture may bubble up. Add the vanilla extract and a pinch of salt, then stir until smooth.

Cool the Sauce
Remove from heat and allow the caramel sauce to cool slightly before serving.
