Shrimp Preparation

Season the Shrimp
In a bowl, toss the shrimp with olive oil and Cajun seasoning until evenly coated.

Cook the Shrimp
Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side, until they are opaque and cooked through. Remove from heat.
Corn Salsa Preparation

Mix the Salsa
In a bowl, combine the corn, diced red onion, diced red bell pepper, chopped cilantro, lime juice, and salt. Mix well and set aside.
Spicy Aioli Preparation

Prepare the Aioli
In a small bowl, whisk together the mayonnaise, Sriracha, garlic powder, and lemon juice until smooth. Adjust seasoning to taste.
Pickled Onions Preparation

Pickle the Onions
In a small saucepan, combine apple cider vinegar, sugar, and salt. Heat until the sugar dissolves. Pour over the sliced red onion in a bowl and let sit for at least 30 minutes.
Taco Assembly

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat until pliable.

On each tortilla, layer the blackened shrimp, corn salsa, pickled onions, and drizzle with spicy aioli. Sprinkle Tajin seasoning on top.
