Blackened Mahi Mahi

    Prepare the Mahi Mahi

    In a small bowl, mix paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture generously over both sides of the mahi mahi fillets.

    Cook the Mahi Mahi

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the mahi mahi fillets and cook for about 4-5 minutes per side, or until the fish is cooked through and has a charred, blackened appearance. Remove from skillet and set aside.

Chorizo & Corn Hash

    Cook the Chorizo

    In the same skillet used for the mahi mahi, add 1 tablespoon of olive oil and heat over medium heat. Add the diced chorizo and cook until browned and crispy, about 5-7 minutes.

    Add the Vegetables

    Add the red onion and red bell pepper to the skillet with the chorizo. Cook for about 3-4 minutes, stirring occasionally, until the onions are translucent.

    Incorporate the Corn

    Add the corn kernels to the skillet, season with salt and black pepper to taste, and cook for an additional 2-3 minutes until heated through. Stir in the chopped cilantro just before removing from heat.

Creamy Mashed Potatoes

    Boil the Potatoes

    In a large pot, add the peeled and cubed potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Salsacado

    Prepare the Salsacado

    In a medium bowl, combine diced avocado, diced tomato, lime juice, chopped cilantro, and salt to taste. Gently mix to combine without mashing the avocado.
