Prepare the Roasted Garlic Mayo

Make the Mayo
Once the garlic is cool, squeeze the cloves into a bowl. Add mayonnaise and mix well. Set aside.
Prepare the Chicken

Mix the Blackening Spice
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, black pepper, and salt. Mix well.

Season the Chicken
Rub the spice mixture evenly over both sides of each chicken breast.

Cook the Chicken
Heat a skillet over medium-high heat and add a little oil. Cook the chicken breasts for 6-7 minutes per side, or until cooked through and a nice crust forms.
Cook the Pancetta

Crisp the Pancetta
In the same skillet, add the pancetta slices and cook until crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Assemble the Sandwich

Build the Sandwich
On the bottom half of each bun, spread a generous amount of roasted garlic mayo. Add the cooked chicken breast, top with crispy pancetta, a slice of cheddar cheese, shredded lettuce, and tomato slices. Close the sandwich with the top half of the bun.
