    In a bowl, combine the beef cubes with white vinegar, minced garlic, grated ginger, mustard seeds, cumin seeds, coriander seeds, turmeric powder, red chili powder, and salt. Mix well to coat the beef. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

    In a large pot or Dutch oven, heat the vegetable or coconut oil over medium heat. Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.

    Pour in the coconut milk and water. Stir to combine, and bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let it cook for 1.5 to 2 hours, or until the beef is tender.
