Cook Quinoa
Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Cook Farro
In a separate pot, combine 1 cup of farro with 3 cups of water and a pinch of salt. Bring to a boil, reduce heat, and simmer uncovered for 25-30 minutes until tender. Drain any excess water and set aside.

Cook Barley
In another pot, add 1 cup of barley and 3 cups of water. Bring to a boil, then reduce heat and simmer for 30-40 minutes until the grains are tender. Drain any excess water and set aside.
Preparing Vegetables

Chop Vegetables
While the grains are cooking, chop the red bell pepper, cucumber, and red onion into small pieces. Halve the cherry tomatoes and chop the fresh parsley. Set aside.

In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic cloves, 1 teaspoon of salt, and 0.5 teaspoon of black pepper until well combined.

In a large mixing bowl, combine the cooked quinoa, farro, and barley. Add the chopped vegetables and pour the dressing over the top. Toss everything together until evenly coated.
