Prepare the Cauliflower Rice

Step 1: Prepare Cauliflower
Remove the leaves and stem from the cauliflower and cut it into florets.

Step 2: Rice the Cauliflower
Using a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process.

Step 3: Cook Cauliflower Rice
In a large skillet over medium heat, add a splash of water or olive oil. Add the riced cauliflower and cook for about 5-7 minutes, stirring occasionally, until tender. Set aside.
Prepare the Vegetables and Greens

Step 4: Chop the Vegetables
Dice the bell pepper, cucumber, and halve the cherry tomatoes. Shred the carrot and slice the avocado.

Wash and dry the spinach and kale. If using whole kale leaves, chop them into bite-sized pieces.
Make the Dressing

In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and minced garlic until well combined.
Assemble the Bowl

In a large serving bowl, start with a base of cauliflower rice. Layer the spinach, kale, bell pepper, cucumber, carrot, cherry tomatoes, and avocado on top.

Pour the dressing over the assembled bowl and gently toss everything together to combine flavors.
