Method
Preparing the Blackened Mahi Mahi
Mix the Spices
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well to create a spice blend.
Season the Mahi Mahi
Rub the spice blend evenly over both sides of the mahi mahi fillets.
Sear the Fish
Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned mahi mahi fillets and cook for about 4-5 minutes on each side until blackened and cooked through. Remove from heat and set aside.
Preparing the Chorizo & Corn Hash
Cook the Chorizo
In a large skillet, heat olive oil over medium heat. Add the chorizo and cook for about 5-7 minutes until browned and cooked through, breaking it apart with a spatula.
Add Vegetables
Add diced red bell pepper and yellow onion to the skillet. Sauté for another 4-5 minutes until the vegetables are softened.
Incorporate Corn
Stir in the corn and season with salt and black pepper to taste. Cook for an additional 3-4 minutes until heated through. Remove from heat and keep warm.
Making the Creamy Mashed Potatoes
Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth and creamy. Season with salt and black pepper to taste.
