Method

Crust

1

Prepare the Crust

In a food processor, crush the chocolate sandwich cookies into fine crumbs. Melt the unsalted butter in a small saucepan over low heat. In a bowl, combine the cookie crumbs and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch pie pan to form an even crust. Set aside.

Fudge Layer

2

Make the Fudge

In a small saucepan, combine the semi-sweet chocolate chips and heavy cream. Heat over medium-low heat, stirring constantly until the chocolate is fully melted and the mixture is smooth. Pour the fudge over the crust, spreading it evenly. Place the pie in the freezer for about 30 minutes to set the fudge layer.

Mocha Ice Cream Layer

3

Add the Ice Cream

Once the fudge layer has set, remove the pie from the freezer. Scoop the mocha ice cream onto the fudge layer, spreading it evenly to cover the fudge completely. Smooth the top with a spatula. Return the pie to the freezer for at least 2 hours or until the ice cream is firm.

Topping

4

Add Toppings

Before serving, sprinkle the sliced almonds over the top of the mocha ice cream layer. Drizzle with chocolate sauce as desired. Slice and serve chilled.
