Prepare and Roast Tomatoes
Preheat the oven to 400°F (200°C). Slice the Roma tomatoes in half lengthwise and place them cut side up on a baking sheet. Drizzle with olive oil, and sprinkle with salt, black pepper, and chopped fresh basil. Roast in the preheated oven for about 25-30 minutes until the tomatoes are soft and slightly caramelized.
Whipped Feta Cheese
Make Whipped Feta
In a food processor, combine feta cheese, cream cheese, olive oil, a peeled garlic clove, and lemon juice. Blend until smooth and creamy. Add chopped fresh parsley and blend again briefly. Adjust seasoning with salt if necessary.
Garlic Crostini
Prepare Crostini
Slice the baguette into 1/2 inch thick slices. Preheat a skillet over medium heat and add olive oil. Brush one side of each bread slice with the olive oil. Add minced garlic to the oil and sauté briefly until fragrant. Place the slices in the skillet, oiled side down, and toast until golden brown, about 2-3 minutes per side.
