Method

Dumpling Preparation

    Prepare the Filling

    In a large bowl, combine the chopped shiitake mushrooms, shredded cabbage, grated carrot, chopped green onions, minced garlic, and grated ginger. Add soy sauce, sesame oil, salt, and pepper. Mix well and set aside.

    Make the Dough

    In a mixing bowl, combine all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Form the Dumplings

    After resting, divide the dough into small balls (about 1 inch in diameter). Roll each ball into a thin circle. Place a spoonful of filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and press the edges to seal.

Cooking the Potstickers

    Cook the Potstickers

    In a large skillet, heat a tablespoon of oil over medium-high heat. Place the dumplings flat-side down in the skillet and cook for about 2-3 minutes until the bottoms are golden brown.

    Add Water and Steam

    Carefully add 1/4 cup of water to the skillet and cover instantly with a lid. Steam the dumplings for about 5-7 minutes until the water has evaporated and the dumplings are cooked through.

Sauce and Salsa Preparation

    Make the Chili Ponzu Sauce

    In a small bowl, whisk together soy sauce, fresh lime juice, and chili flakes. Set aside.

    Prepare the Mango Salsa

    In another bowl, combine diced mango, finely chopped red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.
