Prepare Sushi Rice

Rinse and Cook
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions, or bring to a boil in a pot, then cover and simmer for 20 minutes until water is absorbed. Remove from heat and let it sit for 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
Prepare Tuna

Slice the Tuna
Using a sharp knife, slice the sushi grade tuna into small cubes or thin strips, depending on your preference.

Marinate
In a mixing bowl, combine the sliced tuna with soy sauce, sesame oil, and wasabi. Gently mix and set aside to marinate for about 10 minutes.
Assemble the Sushi Stack

Layer the Ingredients
In a small mold or a ring, place a layer of seasoned sushi rice at the bottom. Press it down gently to form a solid layer.

Add Tuna
Next, add a layer of the marinated tuna on top of the rice, pressing it down gently to hold its shape.

Top with Prawn Crackers
Finish with a layer of seasoned prawn crackers atop the tuna.
Garnish and Serve

Garnish
Sprinkle finely chopped chives or scallions and sesame seeds on top of the stack for garnish.

Serve
Carefully remove the mold or ring to reveal the sushi stack. Serve immediately with extra soy sauce and wasabi on the side.
