Main Ingredients

For Sriracha Aioli

Method

Prepare Chicken

  1. 1

    Marinate the Chicken

In a bowl, combine the chicken breast with sweet chili sauce. Ensure the chicken is fully coated. Cover and marinate in the refrigerator for at least 30 minutes.

  2. 2

    Cook the Chicken

Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side until the chicken is fully cooked and has nice grill marks. Let it rest for 5 minutes before slicing.

Prepare Sriracha Aioli

  1. 3

    Mix Aioli Ingredients

In a small bowl, combine mayonnaise, sriracha, lime juice, garlic powder, and salt. Whisk until smooth and well combined. Adjust seasoning to taste. Refrigerate until ready to serve.

Prepare Vegetables and Nuts

  1. 4

    Slice Cucumbers

Wash the cucumbers and slice them into thin rounds or half-moons, depending on your preference.

  2. 5

    Toast Cashews

In a dry skillet over medium heat, toast the cashews for 3-4 minutes until fragrant and slightly golden. Stir frequently to avoid burning.

Serve

  1. 6

    Plate the Dish

On a serving platter, arrange the sliced chicken, cucumbers, and sprinkle toasted cashews on top. Serve with the sriracha aioli on the side.
