Method

Preparation

  1. 1

    Prepare the Tenderloin

Take the 9oz tenderloin filet out of the refrigerator and allow it to come to room temperature for about 30 minutes before cooking.

  2. 2

    Season the Filet

In a small bowl, combine kosher salt, black pepper, garlic powder, and fresh rosemary. Rub the mixture all over the tenderloin filet. Drizzle olive oil over the filet and massage it into the meat.

Cooking

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat for about 5 minutes until it's hot.

  2. 4

    Sear the Filet

Add the tenderloin filet to the hot skillet and sear for about 4-5 minutes on each side for medium-rare doneness. Adjust the time to your desired level of doneness.

  3. 5

    Add Butter and Herbs (Optional)

For added flavor, during the last minute of cooking, add butter and fresh thyme to the skillet. Spoon the melted butter over the filet.

Serving

  1. 6

    Rest the Meat

Once cooked to your desired doneness, remove the filet from the skillet and let it rest on a plate for 5 minutes.

  2. 7

    Optional Sauce

In the same skillet, you can add red wine to deglaze the pan, scraping up any browned bits, and reduce it to create a sauce to serve with the filet.

  3. 8

    Serve

Slice the tenderloin filet and serve with the optional red wine sauce, if desired.
