Salad Preparation

    Prepare the Greens

    In a large bowl, combine the mixed greens. Rinse them under cold water and spin dry or pat them with a clean kitchen towel.

    Chop the Vegetables and Fruits

    Slice the cucumber into thin rounds, hull the strawberries and slice them in half, and dice the avocado into bite-sized pieces.

    Combine Salad Ingredients

    Add the sliced cucumbers, strawberries, avocado, and shredded aged cheddar cheese to the bowl with the mixed greens.

    Prepare Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all water is absorbed. Fluff with a fork and let cool.

    Add Toppings

    Once the quinoa has cooled, add it to the salad mixture along with the roasted pumpkin seeds.

Dressing Preparation

    Make the Dressing

    In a small bowl, whisk together the white balsamic vinegar, olive oil, honey, salt, and black pepper until well combined.

    Pour the dressing over the salad and toss gently to combine all the ingredients. Adjust seasoning with additional salt and pepper as needed.
