    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them rest at room temperature for about 30 minutes. This ensures even cooking.

    Season the Steak

    Generously season both sides of the steak with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers but does not smoke.

    Cook the Steak

    Add the steaks to the hot skillet and cook for 4-5 minutes on one side. Flip the steaks, add butter, garlic, and thyme to the skillet. Baste the steaks with the melted butter for another 4-5 minutes for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a plate for at least 5 minutes before slicing.

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick).

    Soak the Potatoes

    Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain and thoroughly dry the potato strips using a clean kitchen towel or paper towels.

    Heat the Oil

    In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Fry the potatoes in batches for about 3-4 minutes until they are pale and soft. Remove and drain on paper towels.

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 2-3 minutes until golden brown and crispy. Drain on paper towels and season with salt while hot.

    Slice the rested steak against the grain and serve it alongside the crispy frites.

    Sprinkle chopped parsley over the steak and serve with mayonnaise for dipping if desired.
