Prepare Sushi Rice

Rinse and Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then cover and simmer for 20 minutes. Remove from heat and let it sit covered for another 10 minutes.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low until sugar dissolves. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Prepare Tuna Mixture
Dice the sushi grade ahi tuna into small cubes. In a bowl, mix the diced tuna with sriracha sauce and mayonnaise until well combined.

Make Tempura Batter

In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Gradually add ice water, stirring gently until just combined. The batter should be lumpy.
Assemble Sushi Rolls

Lay Out Ingredients
On a bamboo sushi mat, lay a sheet of nori, shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.
Fry Sushi Rolls

Heat Oil
In a deep pan, heat vegetable oil to 350°F (175°C).

Batter and Fry
Cut the sushi roll into 6-8 pieces. Dip each piece into the tempura batter and carefully place in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Serve the spicy tuna rolls hot with soy sauce, pickled ginger, and wasabi on the side.
