    Cook the Bacon

    In a medium skillet, cook the bacon over medium heat until crispy. Remove from skillet, drain on paper towels, and chop into small pieces.

    In the same skillet, add the diced red and green bell peppers. Sauté for about 3-4 minutes until they are tender. Add the chopped green onions and sauté for an additional minute.

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelet

    Pour the egg mixture into the skillet with the sautéed vegetables. Cook on medium heat until the edges start to set, then sprinkle the mixed cheese and chopped bacon on top. Once the eggs are mostly set, gently fold the omelet in half and let it cook for another minute until the cheese melts.
