Cooking Ancient Grains

    Prepare Quinoa and Farro

    Rinse the quinoa and farro under cold water. In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa and farro, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the grains are cooked and the liquid is absorbed. Fluff with a fork and set aside.

Making Lemon Herb Sauce

    Combine Ingredients

    In a small bowl, whisk together the olive oil, fresh lemon juice, chopped dill, minced garlic, salt, and black pepper until well combined. Set aside.

Cooking Salmon and Vegetables

    Prepare the Salmon

    Preheat your grill or oven to 400°F (200°C). Season the Scottish salmon fillets with olive oil, salt, and black pepper.

    Grill the Salmon

    Place the seasoned salmon fillets on the grill or in a baking dish in the oven. Cook for about 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.
