Prepare the Salad Base
In a large bowl, add the mixed salad greens, halved cherry tomatoes, diced cucumber, diced avocado, and sliced hard-boiled eggs.

Add the Salmon
Flake the cooked salmon fillet and gently add it on top of the salad base.
Making Rustic Croutons

Season and Bake
Drizzle olive oil over the bread cubes, sprinkle with garlic powder and salt, and toss to coat. Spread the cubes on a baking sheet and bake for 10-15 minutes or until golden brown, turning halfway through.
Making Sun-Dried Tomato Dressing

Blend the Dressing
In a food processor, combine the sun-dried tomatoes, red wine vinegar, olive oil, honey, salt, and black pepper. Blend until smooth.

Adjust Seasoning
Taste the dressing and adjust seasoning with additional salt or honey as needed.
Assembling the Salad

Combine and Serve
Pour the sun-dried tomato dressing over the salad and toss gently to combine. Top with the rustic croutons and serve immediately.
