Method
Roasting Tomatoes

Prepare the Tomatoes
Preheat your oven to 400°F (200°C). Slice the Roma tomatoes in half lengthwise and place them cut-side up on a baking sheet.

Season the Tomatoes
Drizzle the tomatoes with 2 tablespoons of olive oil, and sprinkle with salt and black pepper. Add 1 tablespoon of balsamic vinegar to enhance the flavor.

Roast the Tomatoes
Roast the tomatoes in the preheated oven for 25-30 minutes, or until they are soft and caramelized. Remove from oven and let cool slightly.
Making Whipped Feta Cheese

Blend Ingredients
In a food processor, combine 200g of feta cheese, 100g of cream cheese, 1 tablespoon of olive oil, 1 garlic clove (minced), and 1 tablespoon of fresh lemon juice.

Add Fresh Herbs
Add 2 tablespoons of chopped fresh herbs (such as parsley and basil) and blend until smooth and creamy. Adjust the seasoning with salt and pepper to taste.
Preparing Crostini

Slice the Baguette
Slice the baguette into 1/2 inch thick slices and arrange them on a baking sheet.

Drizzle with Olive Oil
Brush each slice with 2 tablespoons of olive oil and rub with a cut garlic clove for flavor.

Toast the Crostini
Toast the crostini in the oven at 400°F (200°C) for about 10 minutes, or until golden brown and crispy.
Assembly

Assemble the Bruschetta
On each toasted crostini, spread a generous amount of whipped feta cheese, top with roasted tomatoes, and garnish with additional fresh herbs if desired.
