Making the Curry Paste

    Prepare the Ingredients

    Remove the stems and seeds from the red chili peppers. Peel the galangal (or ginger), shallots, and garlic cloves.

    Blend the Paste

    In a food processor, combine the red chili peppers, galangal, lemongrass, kaffir lime leaves, shallots, garlic, cilantro stems, and salt. Blend until a smooth paste forms.

Cooking the Curry

    Heat the Oil

    In a large pot or wok, heat the vegetable oil over medium heat.

    Add the Curry Paste

    Once the oil is hot, add the prepared curry paste. Sauté for about 2-3 minutes until fragrant.

    Pour in the coconut milk and stir well to combine with the curry paste. Let it simmer for 5 minutes.

    Add Tofu and Vegetables

    Gently add the cubed tofu, sliced bell peppers, and zucchini into the pot. Stir to coat the vegetables with the curry sauce.
