Preparation

  1. 1

    Season the Rib Eye

In a small bowl, combine kosher salt, ground black pepper, garlic powder, and chopped fresh rosemary. Rub this seasoning mixture all over the prime rib eye piece. Let it sit at room temperature for about 30 minutes to allow the flavors to penetrate the meat.

Cooking

  1. 2

    Preheat the Oven

Preheat your oven to 450°F (232°C). This high temperature will help to sear the meat and create a nice crust.

  2. 3

    Sear the Meat

In a large oven-safe skillet over medium-high heat, add the olive oil. Once hot, carefully place the seasoned rib eye into the skillet. Sear for about 4-5 minutes on each side until a nice brown crust forms.

  3. 4

    Roast in Oven

Transfer the skillet to the preheated oven. Roast the rib eye for about 15-20 minutes for medium-rare, or until it reaches an internal temperature of 130°F (54°C). Adjust the time according to your preferred level of doneness.

  4. 5

    Rest the Meat

Once cooked to your liking, remove the skillet from the oven and transfer the rib eye to a cutting board. Let it rest for at least 10 minutes before slicing. This allows the juices to redistribute throughout the meat.
