Method

Preparation

  1. 1

    Prepare the Steak

Remove the prime rib eye from the refrigerator and let it rest at room temperature for about 30-60 minutes before cooking.

  2. 2

    Season the Steak

Pat the steak dry with paper towels. In a small bowl, mix together kosher salt, black pepper, garlic powder, and dried rosemary. Rub the olive oil all over the steak, then liberally season both sides with the spice mixture.

Cooking

  1. 3

    Preheat the Grill or Oven

Preheat your grill to high heat (about 450°F to 500°F) or preheat your oven to 400°F.

  2. 4

    Sear the Steak

If using a grill, place the steak directly on the hot grill grates. Sear for about 4-5 minutes on one side until a nice crust forms. Flip the steak and sear the other side for an additional 4-5 minutes.

  3. 5

    Finish Cooking

For medium-rare, transfer the steak to the cooler part of the grill or into the oven and cook until it reaches an internal temperature of 135°F, about 10-15 minutes more. Adjust cooking time based on your desired doneness.

  4. 6

    Rest the Steak

Once cooked, remove the steak from the heat. Let it rest for at least 10-15 minutes before slicing to allow the juices to redistribute.

Serving

  1. 7

    Slice and Serve

Slice the steak against the grain and serve with fresh rosemary sprigs and butter on top, if desired.
