    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick fries, about 1/2 inch wide.

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Drain the fries and pat them dry with a clean towel.

    Stir in soy sauce, black pepper, garlic powder, and onion powder. Let it simmer for about 5-10 minutes until thickened.

    Place a generous serving of fries on a plate.

    Top with hot gravy, followed by cheese curds.
