Sauté Mushrooms
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the fresh shiitake mushrooms and sauté for about 5-7 minutes until they become crispy. Add the rehydrated shiitake mushrooms, minced garlic, soy sauce, and fresh thyme. Cook for another 3-5 minutes until fragrant and well combined.

Cook Quinoa
In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Assemble the Zen Bowl
In a serving bowl, place a generous portion of the quinoa and vegetable mixture, top with the sautéed mushrooms, sliced avocado, and sprinkle sesame seeds on top. Drizzle with Sriracha sauce to taste.
