Method

Prepare the Broth

    Roasting the Bones

    Preheat your oven to 200°C (400°F). Place the pork bones on a baking sheet and roast for about 30 minutes until browned.

    Simmering the Broth

    In a large pot, combine the roasted pork bones, water, garlic, ginger, and green onions. Bring to a boil, then reduce heat and simmer for at least 4 hours. Skim any foam that rises to the top.

    Adding Miso

    After 4 hours, strain the broth to remove the solids. Return the liquid to the pot, add miso paste and soy sauce, and stir until dissolved. Keep warm.

Cook the Pork Belly

    Marinating

    In a bowl, combine salt, black pepper, sugar, soy sauce, and mirin. Rub this mixture all over the pork belly and marinate for at least 30 minutes.

    Searing

    In a pan over medium heat, sear the pork belly on all sides until golden brown, about 5 minutes.

    Cooking

    Reduce the heat to low, cover, and cook for about 1 hour, basting occasionally with the marinade.

    Slicing

    Once cooked, remove the pork belly from the pan, let it rest for 10 minutes, and then slice into thin pieces.

Prepare the Noodles and Toppings

    Cooking Noodles

    In a pot, boil water and cook the ramen noodles according to package instructions. Drain and set aside.

    Soft-boiling Eggs

    In a separate pot, boil water. Gently add eggs and cook for 6-7 minutes. Transfer to an ice bath for 5 minutes, then peel.

    Plating

    In a bowl, add a serving of noodles, ladle in the miso broth, and top with sliced pork belly, soft-boiled egg halves, nori sheets, menma, chili oil, and sesame seeds.
