Crust Preparation

Prepare the Cookie Crust
In a food processor, crush the chocolate sandwich cookies into fine crumbs. Melt the unsalted butter in a microwave or on the stovetop. In a mixing bowl, combine the cookie crumbs and melted butter until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch pie dish to form an even crust. Chill in the refrigerator for 30 minutes.

Make the Fudge Layer
In a small saucepan over low heat, combine the semi-sweet chocolate chips and heavy cream. Stir continuously until the chocolate is completely melted and the mixture is smooth. Remove from heat and stir in the vanilla extract. Allow the fudge to cool slightly before pouring it into the chilled cookie crust. Spread it evenly and place it back in the refrigerator for 30 minutes to set.

Add the Mocha Ice Cream
Once the fudge layer has set, remove the pie from the refrigerator. Scoop the mocha ice cream and spread it evenly over the fudge layer. Use a spatula to ensure an even layer. Return the pie to the freezer for at least 2 hours to firm up the ice cream.

Once the ice cream has firmed up, remove the pie from the freezer. Top the pie with the sliced almonds and whipped cream. Optionally, sprinkle chocolate shavings over the whipped cream for added decoration. Slice and serve immediately, or return to the freezer until ready to serve.
