Preparation of Brussel Sprouts

    Trim and Halve

    Rinse the brussel sprouts under cold water. Trim the ends and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta bacon. Cook until crispy, about 5-7 minutes. Once cooked, remove from the skillet and set aside, leaving the rendered fat in the skillet.

    Sauté Brussel Sprouts

    In the same skillet, add olive oil to the pancetta fat. Increase the heat to medium-high. Add the halved brussel sprouts, season with salt and black pepper, and sauté for about 8-10 minutes until they are golden brown and tender.

Miso Maple Glaze

    Make the Glaze

    In a small bowl, whisk together the white miso paste, pure maple syrup, rice vinegar, soy sauce, minced garlic, and grated ginger until smooth and well combined.

    Combine Glaze with Brussel Sprouts

    Once the brussel sprouts are sautéed, reduce the heat to medium and pour the miso maple glaze over the sprouts. Stir well to coat evenly and cook for an additional 2-3 minutes until the glaze thickens slightly.

Serving

    Plate and Serve

    Transfer the glazed brussel sprouts to a serving dish. Top with the toasted chopped almonds for added crunch and flavor. Serve warm.
