Grilling Chicken

    Marinate the Chicken

    In a bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Mix well, then add the chicken breasts and coat them evenly in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove chicken from the marinade and place on the grill. Cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.

Cooking Jasmine Rice

    Prepare the Rice

    In a saucepan, bring 4 cups of water to a boil. Add 2 cups of jasmine rice and 1 tsp of salt. Stir briefly, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed.

    Fluff the Rice

    Once cooked, remove the saucepan from heat. Let it sit covered for 5 minutes, then fluff the rice with a fork.

Preparing Fresh Seasonal Vegetables

    Chop the Vegetables

    Wash and chop zucchini, bell pepper, and carrots into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add the chopped vegetables, season with salt and black pepper to taste, and sauté for about 5-7 minutes until they are tender but still crisp.
