Pickled Onions

    Prepare the Pickled Onions

    Thinly slice the red onion and place it in a jar. In a saucepan, combine white vinegar, sugar, and salt. Heat until sugar dissolves, then pour over onions. Cover and let sit for at least 30 minutes.

Roasted Vegetables

    Roast the Vegetables

    Preheat the oven to 400°F (200°C). Chop the bell peppers, zucchini, and red onion into bite-sized pieces. Toss with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.

Home Fries

    Prepare the Home Fries

    Dice the potatoes into small cubes. In a skillet, heat olive oil over medium heat. Add potatoes, paprika, garlic powder, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until golden brown and crispy.

Cooking Pancetta and Sausage

    Cook the Pancetta and Sausage

    In a large skillet, cook the pancetta over medium heat until crispy. Remove and set aside. In the same skillet, cook the jalapeño pork sausage until browned and cooked through. Combine with the cooked pancetta.

Poaching Eggs

    Poach the Eggs

    Bring a pot of water to a gentle simmer and add vinegar. Crack the eggs into a small bowl and gently slide them into the water. Poach for about 3-4 minutes until whites are set but yolks remain runny. Remove with a slotted spoon.

Making Hollandaise Sauce

    Prepare the Hollandaise Sauce

    In a metal bowl over simmering water, whisk egg yolks until they thicken. Gradually whisk in melted butter and lemon juice until the sauce is smooth. Season with salt to taste.

Assembling the Farmers Hash

    In serving bowls, layer the home fries, followed by the roasted vegetables. Top with the pancetta and sausage mixture. Place poached eggs on top and drizzle with hollandaise sauce. Garnish with pickled onions.
