Roast the Vegetables
Preheat the oven to 400°F (200°C). Chop the bell peppers, zucchini, and red onion into bite-sized pieces. Toss with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.

Cook the Pancetta and Sausage
In a large skillet, cook the pancetta over medium heat until crispy. Remove and set aside. In the same skillet, cook the jalapeño pork sausage until browned and cooked through. Combine with the cooked pancetta.

Poach the Eggs
Bring a pot of water to a gentle simmer and add vinegar. Crack the eggs into a small bowl and gently slide them into the water. Poach for about 3-4 minutes until whites are set but yolks remain runny. Remove with a slotted spoon.

In serving bowls, layer the home fries, followed by the roasted vegetables. Top with the pancetta and sausage mixture. Place poached eggs on top and drizzle with hollandaise sauce. Garnish with pickled onions.
