Preparation of Chicken
1. Prepare the Dry Rub
In a small bowl, mix together chipotle powder, brown sugar, paprika, garlic powder, salt, and black pepper.
2. Season Chicken
Rub the dry mixture evenly over the chicken breasts. Drizzle with lime juice and let it marinate for at least 30 minutes.

Rinse the quinoa under cold water in a fine-mesh strainer.
5. Cook Quinoa
In a saucepan, combine rinsed quinoa, water, lemon juice, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
