Crust Preparation

    Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with butter.

    Mix Crust Ingredients

    In a medium bowl, combine the graham cracker crumbs, 0.5 cups of granulated sugar, and melted unsalted butter. Mix until thoroughly combined.

    Form the Crust

    Press the mixture firmly into the bottom of the prepared springform pan. Bake in the preheated oven for about 10 minutes or until lightly golden. Remove from oven and let cool.

Filling Preparation

    Prepare Cream Cheese

    In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer.

    Add Sugar and Sour Cream

    Gradually add 1 cup of granulated sugar and 0.5 cups of sour cream to the cream cheese, mixing until well combined.

    Incorporate Vanilla and Eggs

    Add 1 tsp of vanilla extract and beat in the eggs one at a time, mixing well after each addition until smooth and creamy.

    Pour Filling into Crust

    Pour the cream cheese filling mixture over the cooled graham cracker crust, spreading it evenly.

Baking

    Bake the Cheesecake

    Bake the cheesecake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly.

    Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour to cool gradually. Then refrigerate for at least 4 hours or overnight.

Topping Preparation

    Wash and dry the fresh strawberries, blueberries, and raspberries. Slice the strawberries if desired.
