Cook the Chicken
In a skillet over medium heat, add a drizzle of oil and cook the chicken breast for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before dicing.

Prepare Vegetables
While the chicken is cooking, finely dice the green onions, bell pepper, and carrots. Set them aside in a mixing bowl.

Chop Cashews
Roughly chop the cashews and add them to the vegetable mix.
Mixing Sauce

Make the Spicy Mayo
In a small bowl, combine the mayonnaise, soy sauce, sesame oil, and sriracha. Mix well until smooth.

Combine Chicken and Vegetables
Dice the cooked chicken and add it to the bowl with the chopped vegetables and cashews. Pour half of the spicy mayo over the mixture, and stir to combine.
Serving

Assemble the Wraps
Take a lettuce leaf and spoon the chicken mixture into the center. Drizzle with additional spicy mayo if desired. Fold the lettuce around the filling and serve immediately.

Fry Wontons (Optional)
In a separate pan, heat oil over medium-high heat and fry the wontons until golden brown and crispy. Serve alongside the wraps.
