Brioche Bites Preparation

Prepare the Brioche
Cut the brioche bread into small bite-sized cubes, approximately 1-inch in size. Set aside.

Make the Egg Mixture
In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and granulated sugar until well combined.

Soak the Brioche
Add the brioche cubes to the egg mixture and gently fold to coat all pieces. Allow the mixture to sit for 10 minutes to let the bread absorb the liquid.

Cook the Brioche Bites
In a large skillet, melt 2 tablespoons of butter over medium heat. Once hot, add the soaked brioche cubes in a single layer. Cook for about 2-3 minutes on each side, or until golden brown. Work in batches, adding more butter as needed.

Make the Caramel
In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly until it melts and turns a golden amber color.

Add Butter
Once the sugar has melted, carefully add the unsalted butter and stir until melted and well combined.

Add Cream and Flavoring
Slowly pour in the heavy cream while stirring continuously. The mixture will bubble up; continue stirring until smooth. Add vanilla extract and a pinch of salt.

Cool the Sauce
Remove from heat and let the caramel sauce cool slightly before serving.
