Method
Preparing the Blackened Shrimp

Season the Shrimp
In a bowl, toss the shrimp with Cajun seasoning, olive oil, salt, and black pepper until evenly coated.

Cook the Shrimp
Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they are blackened and opaque. Remove from heat and set aside.
Making the Corn Salsa

Combine Ingredients
In a mixing bowl, combine the fresh corn kernels, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.
Preparing the Spicy Aioli

Mix the Aioli
In a small bowl, whisk together the mayonnaise, Sriracha sauce, lime juice, and garlic powder until smooth. Adjust seasoning if necessary.
Pickling the Onions

Prepare the Pickling Mixture
In a saucepan over medium heat, combine apple cider vinegar, sugar, and salt. Stir until the sugar and salt dissolve.

Warm the Tortillas
Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm.

Build the Tacos
On each tortilla, layer the blackened shrimp, corn salsa, a drizzle of spicy aioli, and top with pickled onions.

Serve the tacos with guacamole and tajin chips on the side for dipping.
