Blackened Mahi Mahi

    Prepare the Spice Mix

    In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

    Season the Mahi Mahi

    Rub the spice mix all over the mahi mahi fillets to coat evenly.

    Cook the Mahi Mahi

    Heat olive oil in a skillet over medium-high heat. Once hot, add the fillets and cook for about 4-5 minutes per side or until the fish is cooked through and has a blackened crust.

Chorizo & Corn Hash

    Cook the Chorizo

    In a large skillet, heat olive oil over medium heat. Add the chorizo and cook for about 5 minutes, breaking it up with a spoon until browned.

    Add Vegetables

    Add the diced red bell pepper, red onion, and minced garlic to the skillet. Cook for another 3-4 minutes until the vegetables are tender.

    Stir in the corn kernels, season with salt and black pepper, and cook for an additional 2-3 minutes until everything is heated through.

Creamy Mashed Potatoes

    Place the peeled and cubed potatoes in a large pot, cover with water, and bring to a boil. Cook for about 15-20 minutes or until tender.

Salsacado
