Chicken Burger Preparation

    Prepare the Chicken

    Season the chicken breasts generously with blackening seasoning on both sides.

    Cook the Chicken

    Heat a large skillet over medium-high heat and add a little oil. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is blackened and cooked through.

    Cook the Pancetta

    In the same skillet, add the pancetta slices and cook until crispy, about 2-3 minutes per side. Remove from the skillet and set aside.

    Melt the Cheese

    Once the chicken is cooked, place a slice of cheddar cheese on each chicken breast. Cover the skillet and let the cheese melt for about 1-2 minutes.

Roasted Garlic Mayo Preparation

    Prepare the Garlic

    If you don't have roasted garlic, you can roast it by wrapping whole garlic cloves in aluminum foil and baking at 400°F (200°C) for about 30-35 minutes until soft.

    Mix the Mayo

    In a small bowl, mash the roasted garlic cloves with a fork and mix in the mayonnaise and lemon juice until well combined.

Assembly

    Assemble the Burger

    On the bottom half of each bun, spread a generous amount of roasted garlic mayo. Add the blackened chicken with melted cheddar, followed by crispy pancetta, shredded lettuce, and slices of tomato. Top with the other half of the bun.
